Cooleeney Farm is home to Ireland’s largest range of artisan cheeses. In 1986, Jim &
Breda Maher made their first cheese, Cooleeney, and since then have developed over
10 different cheeses using cow’s and goat’s milk. Cooleney’s new smoke house is now
in operation and they are pleased to introduce two new smokey cheeses - Smokey
Tipperary Brie and Smokey Tipperary Orchard. The dedicated cheesemakers at Cooleeney
have combined their skills with local brewer Culan at White Gypsy to develop a unique
creation, Ruby. Ruby is a craft beer washed cheese that combines the best of two
Tipperary products. All ingredients are the fruits of Tipperary, even the hops are grown
locally. Ruby is soft with a velvety texture and a distinct malt flavour.

Veronica Molloy has been trading at Bloom since it began, with visitors to the show
returning to her stall year on year. Crossogue boasts an unparallelled range of jams,
preserves chutneys and curds (over 80 in all) produced traditionally by Veronica and her
small team in Tipperary. All of their products are handmade in batches of 20 therefore
retaining the superb flavour of fruit. There is no added sugar in any range of spreads , The
jams are sweetened by the batch of the birch tree and are suitable for diabetics.
