         INTRODUCTION

The COVID-19 pandemic has challenged the Irish foodservice industry as
never before. As we all transition to a “Living with COVID” era, there is a
need to acknowledge the corresponding impact that this has had on the
foodservice landscape and the longer-term ramifications that will continue to
         affect the market.

Hospitality operators have displayed amazing resilience in the face of
everything that COVID has thrown at them. As many of them reopen their
doors for the first time in over four months, it is important to recognize that
both industry and consumer requirements have evolved.

This e-booklet contains detailed profiles of 20 Irish food producers supplying
the foodservice industry. We include an overview of their foodservice
product range, specifically calling out their ‘Covid Ready’ solutions aimed at
meeting the new needs of their foodservice customers.

The sustainability challenges posed by COVID-19 and the ambitious climate
action targets set out in the new programme for government, mean that
the need to focus on sustainability rings louder than ever. Origin Green will
play a critical role in responding to this challenge as the industry recovers
and evolves. Included in the following profiles are details of individual
sustainability stories for each of the 20 producers, confirming their Origin
         Green commitments and target areas.
